Eating In // Pecan-Date Muffins
Snow days are the perfect time to catch up on work, rest, and more importantly, bake. I love to bake for my family when we are stuck together in the same house. Here is a muffin recipe for you try tomorrow morning, just in case you won't be able to make it out of the house.
The Goods:
yields 12 muffins
- 2 cups all purpose flour
- 1 tbls baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 1 cup chopped dates
- 1/2 cup chopped pecans
- 1 tsp orange zest
- 1 egg, beaten
- 5 tbls melted coconut oil
- 2/3 cup sugar
- 1 tsp vanilla extract
Directions:
- Preheat the oven to 400 degrees. In a large mixing bowl, beat the egg with the milk, sugar, and the vanilla extract.
- In a separate bowl, whisk the flour, baking powder, and salt then add it to the bowl with the wet ingredients.
- Gently fold in the pecans, dates, and the melted coconut oil until just mixed. Divide the batter into a muffin pan and bake for 15-20 minutes. Enjoy!
