Eating In // Cardamom- Streusel Coffee Cake
I'm not going to say that you should never buy coffee cake again because I don't know your life, but I will say you should at least try and make it some time. That is, if coffee cake is something you really like and are passionate about. Just kidding. You don't have to have a passion for it. This would be great if you are hosting some kind of brunch. It can be made the night before as it takes about an hour when it's all said and done. If you do decide this is a project worth taking on, you will soon realize it is the best coffee cake you have ever eaten (probably).
Ingredients:
For the topping:
- 1-3/4 cup all purpose flour
- 1 cup light brown sugar
- 1-1/2 sticks cold butter, cut into pieces
For the cake:
- 1 stick unsalted, room temp butter
- 2 cups all purpose flour
- 1 tsp freshly ground cardamom
- 1-1/4 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup whole milk
- powdered sugar to dust on top
Directions:
1. Using a mixer on medium speed, mix together the topping until it is crumbly and somewhat cohesive; set aside in the fridge until ready to use
2. Preheat oven to 350 degrees F and grease a 10" cake round cake pan.
3. Whisk together the flour, baking soda and powder, and salt in a bowl and set aside.
4. In the bowl of a mixer fitted with a paddle attachment, cream the butter and sugar together on medium-high until light and fluffy; add the eggs one at a time and mix well between each addition. Drizzle in that vanilla extract.
5. Combine the milk and sour cream in a liquid measuring cup and then on low speed, alternate between adding the flour and milk mixture until the batter is well mixed but not over mixed.
6. Pour the batter into your cake pan and then top it with your crumbly streusel mix.
7. Bake for 30-35 minutes and then dust with powdered sugar before serving.
