Eating In // Watermelon Salad
This is a really refreshing recipe for the spring and summer months that can be eaten as a pool side snack or served as a side dish for any meal. Enjoy!
The Goods (Serves 8):
- 1/2 watermelon, diced
- 1 small sweet onion sliced
- 1/2 cup chopped cilantro
- Juice of 3 limes
- 3 tbls apple cider vinegar
- 3 tbls olive oil
- 1 tsp sugar
- 2 tsp minced ginger root
- 1/2 crumbled feta
- Salt and pepper
Directions:
- Slice and dice all of the ingredients and throw into a bowl with the vinegar, lime juice, oil, ginger, salt and pepper, feta and gently mix together.
- Chill for an hour or overnight before serving.
