Eating In // Oatmeal Berry Waffles with Pistachio Orange Syrup

Ingredients: 

  • 1-1/2 cups all-purpose flour 
  • 1 cup quick cooking oats
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt 
  • 2 eggs, lightly beaten 
  • 1/2 cup blackberries 
  • 1/2 cup blueberries
  • 1-1/2 cups buttermilk 
  • 2 tbls sugar 
  • 6 tablespoons melted butter
  • 3/4 cup crushed pistachios ( as a topping) 

For the syrup: 

  • 2 oranges, sliced 
  • 1 cup sugar 
  • 1/2 cup water

Directions: 

1. Preheat your waffle iron. In a medium bowl whisk together the flour, oats, salt, baking powder, and berries. In a separate bowl or large liquid measuring cup, add the buttermilk, eggs, and sugar.

2. Gradually add the liquid to the dry ingredients until well mixed; stir in the melted butter. 

3. Pour about 1/4 cup of batter into the waffle maker and cook for about 4 minutes. Place finished waffles in an oven set at 280 degrees to keep warm. 

4. In a small saucepan, pour in the water, sugar, and oranges and bring to a boil. Boil for about 10 minutes. Serve hot with waffles and sprinkle the pistachios over the top. Enjoy!
