Eating In // Birthday Cake
Every home baker needs something like a "signature" cake. I would like to think that this cake could be that for all you home bakers out there. It's sort of like the classic yellow cake that you would use for a birthday celebration. The recipe makes one layer but can easily be multiplied to make as many as you need.
Ingredients:
- 1-1/2 cups all purpose flour
- 1/2 tsp salt
- 1-3/4 tsp baking powder
- 1/2 cup unsalted butter
- 1 cup of sugar
- 2 eggs
- 1/2 cup milk
- 1 tsp. vanilla extract
Directions:
- Preheat the oven to 350 degrees. Prepare a 9" cake pan with flour and oil.
- In a small bowl, whisk the flour, salt, and baking powder together.
- In the bowl of a mixer with the paddle attachment, cream the butter and sugar together on medium speed for about 5 minutes until fluffy and light. Beat in the eggs one a time and then add the vanilla.
- On low speed, add the flour mixture and the milk making sure to alternate them starting with the flour and ending with the milk and mix until just blended.
- Pour into the prepared pan and bake for 25-30 minutes. Be sure to put some icing or glaze on it. You can use this recipe if you'd like.
