Eating In // Birthday Cake

Every home baker needs something like a "signature" cake. I would like to think that this cake could be that for all you home bakers out there. It's sort of like the classic yellow cake that you would use for a birthday celebration. The recipe makes one layer but can easily be multiplied to make as many as you need. 

Ingredients: 

  • 1-1/2 cups all purpose flour
  • 1/2 tsp salt
  • 1-3/4 tsp baking powder
  • 1/2 cup  unsalted butter
  • 1 cup of sugar 
  • 2 eggs 
  • 1/2 cup milk 
  • 1 tsp. vanilla extract 

Directions: 

  1. Preheat the oven to 350 degrees. Prepare a 9" cake pan with  flour and oil. 
  2. In a small bowl, whisk the flour, salt, and baking powder together. 
  3. In the bowl of a mixer with the paddle attachment, cream the butter and sugar together on medium speed for about 5 minutes until fluffy and light. Beat in the eggs one a time and then add the vanilla.
  4. On low speed, add the flour mixture and the milk making  sure to alternate them starting with the flour and ending with the milk and mix until just blended. 
  5. Pour into the prepared pan and bake for 25-30 minutes. Be sure to put some icing or glaze on it. You can use this recipe if you'd like.
