New Year's Eve Inspiration // Bruschetta Appetizer
So, you have a New Years party to either throw or attend, what should you make as an appetizer? The answer is simple: Bruschetta. This is so easy and dang delicious. The hardest part is just cutting up all the ingredients. The trick with this, is to find the best quality with everything.
The Goods:
Serves 12-14
- 2 ripe heirloom tomatoes, diced
- 1 small red onion, chopped
- 2 garlic cloves, minced
- 3 tbls. fresh rosemary, minced
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 2 tsp. sugar
- Salt and Pepper
- 1 french baguette or italian ciabatta, sliced, and toasted
Directions:
1. Dice the tomatoes, chop the onions, mince the garlic and toss them into a bowl. Mince the rosemary and then add the olive oil and vinegar, salt, pepper, and sugar and add to the bowl. Can be made ahead or served straight away.
2. Slice the baguette and lay the slices onto a sheet pan. Set the oven to broil and toast the bread for like 30 seconds. Be sure to watch it, because it can burn fast.
3. Top the toasted baguette with spoonfuls of the tomato mixture. You don't want the tomatoes to be on the toast for too long, so if you are traveling with it, wait until you arrive to top the toast.
