Eating In // Classic American Pancakes
This is just a classic American pancake recipe. Every cook should have one. The trick to getting a nice golden color is to use a well seasoned cast iron skillet. You don't even have to use butter to fry if the skillet is seasoned enough.
The Goods
1.5 cups all purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1 1/3 cup milk
2 tablespoons melted butter
2 eggs
Directions
1. Combine the dry ingredients in a bowl. In a separate bowl, combine the milk and eggs and whisk them together.
2. Add the wet ingredients to the dry ingredients and whisk until combined.
3. Preheat your skillet over medium heat. You really don't want to turn it up too high. It should be a slow and even heat.
4. If using a griddle or cast iron skillet there is no need for butter. If not, add butter or oil to pan to prevent sticking.
5. Pour about 1/4 cup of batter in skillet for each pancake. When the tops start to bubble and dry out, that is when you flip the pancake.
6. Keep the cakes warm at 200 degrees in oven until ready to serve. Serve with syrup, butter, etc...
