Eating In // Apple-Beet Juice

Need a boost? Try freshly pressed juice. I am relatively new to juicing (in fact my juicer is borrowed from my mother) but, I have come to love it. What I have learned is that it is important to balance vegetables and fruits so as to not have too much sugar in the mix. If you have a juicer, I would encourage you to try this recipe.

The Goods:

Serves 1-2

  • 3 apples
  • 1 beet
  • 1/2 lemon
  • 1/2 sweet potato
  • 2 carrots

Directions:

  1. Cut the fruits and vegetables in halves or fourths. Just cut them enough to ensure that they fit in the juicer. Make sure to wash them all really well. I don't peel anything but you certainly can if you're squeamish about vegetable peels.
  2. Throw all of the goods into the juicer and watch the magic happen. Serve over ice and enjoy!
