Eating In // On The Grill
We have some tasty recipes for your weekend plans. Run to your local farmer's market and pick up the ingredients for this meal. Gather outside and grill some delicious food and start with these eggplant and feta burgers, marinated tomatoes, and grilled corn. You won't regret it.
For the Burgers:
The Goods:
- 1 large eggplant
- 1 block feta
- yummy hamburger buns
- 2 garlic cloves
- 5 basil leaves, chopped
- 2 tbls. olive oil
- 2 cups spring mix
- salt and pepper
Directions:
- Peel the eggplant and slice into 1/4 inch rounds. Season them with olive oil and salt and pepper.
- Wrap the block of feta in aluminum foil and drizzle with olive oil.
- Place the eggplant and the feta packet onto a preheated grill.
- While the eggplant and feta cook, in a mortar and pestle, mash the garlic, basil, olive and salt until the garlic is in small bits. Brush the mixture onto your hamburger buns.
- Place the buns on the grill and toast until lightly golden.
- Once the eggplant is nicely browned on both sides and the feta is warm throughout, remove them from the grill and start the sandwich assembly. Place the eggplant, feta, and lettuce onto the bun and enjoy.
For the corn:
The Goods:
- 4-6 ears of corn
- 3 tbls olive oil
- salt
Directions:
- Peel back the husk of the corn but do not remove.
- Brush the corn with olive oil and sprinkle with salt and then replace the corn husk.
- Place the corn onto the grill and grill, rotating every once in a while, for about 20 minutes.
For the tomatoes:
The Goods:
- 4 medium sized tomatoes
- 3 tbls olive oil
- 5 leaves of basil, sliced chiffonade
- 1 tbls balsamic vinegar
- salt and pepper
Directions:
- Cut the tomatoes into medium sized chunks and then simply top with the basil and salt and pepper and drizzle with olive oil and vinegar. So easy and so fresh.
