Eating In // Chicken Pita Sandwich

So I used to work in this little Greek restaurant that served the best chicken pita sandwiches. The most delicious part of the sandwiches was the sauce he used. The tzatziki sauce. It was so good. I asked my boss to show me how to make it, the trick is to use sour cream instead of greek yogurt. I hope you all try it and enjoy it.

The Goods:

Serves 4-6

  • 12 chicken tenderloins 
  • 2 medium cucumbers
  • 1 large tomato
  • 3 chopped romaine lettuce
  • 4-6 pita loaves 
  • 1 cup sour cream
  • 3 cloves garlic
  • 1/2 tbls olive oil 
  • 1/2 mint leaves
  • 4 lemons 
  • 2 tbls dried basil 
  • 2 tsp garlic powder 
  • salt and pepper 
  • 1 tsp red chili flakes 

Directions: 

  1. Marinade the chicken with the juice of 3 lemons, 1/4 cup olive oil, salt, pepper, and the chili flakes. Marinade for as long as you can or at least 30 minutes.
  2. For the tzatziki sauce: in a food processor, place the garlic, 1 cucumber (chopped slightly) mint, garlic powder, salt, pepper, 1/4 cup olive oil, and basil then blitz until nicely chopped. Mix the cucumber mixture with the sour cream. This will be served on the pita sandwiches. 
  3. In a medium pan that has been swirled with olive oil, cook the chicken over medium-high heat until it is nicely browned and cooked throughout. 
  4. Warm the pita loaves individually on a dry skillet over medium heat. Chop the tomato, lettuce, and second cucumber. Assemble the sandwiches with the chopped veggies, tzatziki, and the chicken.
