Eating In // Caramel Corn

This recipe can really be escalated depending on the quality of ingredients used. I like to use raw or organic sugar and also organic butter just because the taste is so much better. You'll be surprised at how easy this recipe is to execute. 

The Goods:

  • 4 quarts popped popcorn
  • 1 cup organic cane sugar 
  • 1/2 cup light corn syrup
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pure vanilla extract

Directions:

  1. In a large, shallow roasting pan, add popcorn (you can used microwaved or stove top) and place in preheated 250 degrees F oven while preparing caramel. 
  2. Mix sugar, corn syrup, butter and salt in a saucepan. Stirring constantly, bring to a boil over medium heat. Boil 5 minutes without stirring. Remove from heat. 
  3. Stir in baking soda and vanilla; mix well. Pour syrup over warm popcorn, stirring to coat evently.
  4. Bake for 1 hour stirring every 15 minutes. 
  5. Cool; break apart.
